Chicken Brocolli & Pasta


INGREDIENTS:

• 1-1½ pounds Chicken fillet
• 1-qt. Brocolli pieces
• 2/3 cup Parmesan cheese
• 1-cup Milk
• ½ cup Heavy cream
• 1lb. Linguini or like pasta
• ½ cup Scallions(chopped)
• 1 small Shallot(chopped)
• 1 tbls. Garlic(chopped)
• 2-3 tbls. Olive oil
• Salt & Pepper
• 1/3 cup Parsley(chopped)

PREPARATION:

1- Salt & pepper chicken fillets to taste
2- Place large pot on high heat and add olive oil for searing chicken
3- Add chicken pieces leaving ample spacing and sear chicken approx.
20 seconds (until lightly browned) on each side. Set browned chicken
pieces aside in a covered bowl
4- Cook pasta in boiling salted water (7-8 minutes max) and strain. DO NOT RINSE!
5- Reheat 1st pot on high heat adding a little olive oil
6- Add scallions & shallots (first) and then add garlic and brocolli
pieces. Saute on high heat turn occasionally for approx. 3-4 minutes
7- Add milk and heavy cream; turning quickly to deglaze the pan
8- Add pasta, Parmesan cheese, parsley, salt & pepper and chicken
9- Turn mixture over throughly, cover, turn off heat and set aside
for at least 5-minutes (DO NOT REMOVE COVER!!!)
10- Salt & pepper to taste and serve
