Baked Fish


4 lbs. fish (your favorite)
2 sticks margarine
1 cup onions, chopped
1 cup celery, chopped
½ cup green bell pepper, chopped
4 cloves garlic, minced
1 can tomato sauce
1 teaspoon sugar
1 tablespoon Worcestershire sauce
¼ cup dry white wine
Creole seasoning or salt & pepper

Season fish, inside and out, place in open baking
pan. Make a sauce with margarine, tomato sauce, sugar
and vegetables; cook over low heat for 1 hour.
Pour wine over fish, followed by the sauce. Place
in 300 degree oven; cook for 1 hour, basting
occasionally. Serve with mashed Irish potatoes.
